Off the top of my head, the only bit of dialogue that really suggests anything concrete comes from "Quo Vadis, Captain Chandler?"--the season-four episode with the soldier who thinks he's Jesus Christ.
BJ: Come to see your savior? SIDNEY: Mine? No. Yours?
There are multiple ways to interpret that--Sidney's agnostic, atheist, or belongs any number of non-Christian faiths--but I think probably the most plausible, given the mine/yours dichotomy, is that Sidney's Jewish.
There are other, subtler cues, but that's the one I use in my personal canon. :)
